The article overviews modern studies of domestic and foreign scientists in the field extraction biologically active substances from plant materials using enzymes. Extraction enzymes allows for controlled biotransformation due to precise specificity selectivity enzymes, which creates mild conditions that ensure preservation substances. It has been noted quality extractant used a significant effect on efficiency process. Thus, raw treated with combination an electrolyte enzyme are extracted more efficiently by reducing mass transfer barrier. main advantage supercritical fluids as is decrease temperature or pressure leads precipitation extractable substance. One disadvantages process extracting their high cost. To eliminate this disadvantage, following intensification methods used: ultrasonic treatment, treatment microwave treat- ment. most promising intensifying treatment. Ultrasonic under optimal increasing activity provides efficient penetration into tissues material, destruction cell walls.
